Morning Glory Muffins

  • 2 cups flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1¼ cups sugar
  • 1½ cups carrots – finely shredded
  • ½ teaspoon vanilla extract
  • 1 cup vegetable oil
  • 3 eggs – slightly beaten
  • 2 large cooking apples-peeled, cored & shredded
  • ¾ cup flaked coconut
  • ½ cup raisins
  • ½ cup pecans – chopped

Combine flour, soda, salt, cinnamon & sugar in large bowl. Add apples, carrots, coconut, raisins & pecans and stir well. Make a "well" in the center of mixture. Combine oil, eggs and vanilla. Stir into the dry ingredients, just until moistened. Spoon batter into greased muffin pans, filling 3/4 full. Bake 350 degrees for 18 minutes. Makes 24 muffins.
