Combine flour, soda, salt, cinnamon &
sugar in large bowl. Add apples, carrots, coconut, raisins & pecans and stir well.
Make a "well" in the center of mixture. Combine oil, eggs and vanilla. Stir into
the dry ingredients, just until moistened. Spoon batter into greased muffin pans, filling
3/4 full. Bake 350 degrees for 18 minutes. Makes 24 muffins.
