Broccoli Casserole
- 2 pkg frozen chopped broccoli
- 1 can mushroom soup
- 1 c. grated sharp cheese
- 2 eggs beaten
- 1 cup mayonnaise
- 2 tbsp grated onion
- 1 tsp (or more) salt
- Pepper to taste
- 1 cup cracker crumbs
Cook broccoli for 5 minutes using package directions.
Combine next 7 ingredients in bowl, mixing well.
Fold in broccoli.
Spoon into greased 1-quart casserole.
Top with crumbs.
Bake at 400 degrees for ½ hour.
Yields 6 servings.
